Sometimes no matter how good my intentions are, life just sometimes gets in the way of getting our blog posts up on time! As you may know, The Boastful Host was down in Isle of Palms, South Carolina for the last 2 weeks for a very special family wedding that we planned. Don't worry, if you haven't checked out some of the early photos we've been posting, there will be plenty more to come! Well yesterday it was time to make the drive home, and what should have been around a 13 hour drive, took us somewhere closer to 17 very long, traffic filled hours, with a toddler!
While down there though, my husband Paul and I were lucky enough to get some work-free AND baby-free time, and ventured into Charleston to do a little exploring. After receiving numerous recommendations for the Rooftop Bar at Vendue, we had to check it out for ourselves. With a little inspiration from the cocktail on the left (with vodka, citrus, and champagne), I decided I would try to make it my own and bring a little bit of Charleston to all of you!

Always a sucker for a summery brunch-appropriate beverage, today's cocktail, which I'm calling Summer Sun, feels about as light, refreshing and summery as it gets!
To make this cocktail, you'll need you're preferred vodka, elderflower liqueur (St. Germain is amazing, and you only need a tiny bit to make a big impact), prosecco, grapefruit juice, and a little fresh mint.
The recipe for this is really easy to scale up for a party, or down for a party of 1.
