Happy Friday everyone! Hope everyone has had a great week, and is ready for an even better weekend! This week's cocktail is all about simplicity. You do not always have to have 10 ingredients and special bar tools to make a pretty and tasty drink to sip while outside enjoying the beautiful summer sun (even though those can sometimes be a lot of fun!).

Our cocktail of the week is a Bubbly Popsicle! It's even fun just to say!

Ingredients
Prosecco
Real fruit popsicle

Directions
Pour yourself and your guests well chilled glasses of prosecco and add your favorite popsicle. Give your cocktail a stir with your popsicle and it immediately becomes a sweet, fruity, refreshing glass of bubbles to enjoy wherever you choose to lounge on a summery afternoon.

A fun little personal aside. You may have noticed a few flamingos in this post or previous posts. In this house, we are big fans of the 'mingo (as my two year calls them), and you will likely be seeing them (and the rest of the flock) next month for our annual Pink Party. Stay tuned to see what was once just a silly favorite color turn into a annual party (9 years!) that has grown and evolved into a well loved event that our friends will never let us quit!

Sometimes no matter how good my intentions are, life just sometimes gets in the way of getting our blog posts up on time! As you may know, The Boastful Host was down in Isle of Palms, South Carolina for the last 2 weeks for a very special family wedding that we planned. Don't worry, if you haven't checked out some of the early photos we've been posting, there will be plenty more to come! Well yesterday it was time to make the drive home, and what should have been around a 13 hour drive, took us somewhere closer to 17 very long, traffic filled hours, with a toddler!

While down there though, my husband Paul and I were lucky enough to get some work-free AND baby-free time, and ventured into Charleston to do a little exploring. After receiving numerous recommendations for the Rooftop Bar at Vendue, we had to check it out for ourselves. With a little inspiration from the cocktail on the left (with vodka, citrus, and champagne), I decided I would try to make it my own and bring a little bit of Charleston to all of you!

Always a sucker for a summery brunch-appropriate beverage, today's cocktail, ​which I'm calling Summer Sun, feels about as light, refreshing and summery as it gets!

To make this cocktail, you'll need you're preferred vodka, elderflower liqueur (St. Germain is amazing, and you only need a tiny bit to make a big impact), prosecco, grapefruit juice, and a little fresh mint.

The recipe for this is really easy to scale up for a party, or down for a party of 1.

Break out your cocktail shaker and get ready to shake up some summer sun!
