Happy Friday friends! Summer is just flying by, and no matter where you turn, people are talking about back-to-school, and the start of fall. I'm letting you all know right now, that I'm holding onto summer as long as I possibly can! One of my go-to drinks when dining out this summer, has been some version of a light, refreshing, citrusy, gin cocktail (MUST be Hendricks!).
Once I decided I wanted to do a similar drink for all of you, I went back in my archives (circa 2011) to a Manhattan Cocktail Classic seminar that I did, "Beyond the Hangover Cure: What to eat, drink, and do to combat your boozy lifestyle." While this seminar was really geared towards bartenders, a few of the attendees like myself, were not, but thought that we could learn a few helpful tips and fun facts. It obviously made an impression on me, since I'm still referencing it today!
I'm sharing with you one of their featured drinks, The Coconut Pearl, with the idea that it's possible to reduce the effects of hangover by shifting the ingredients in your cocktails to healthier alternatives.
In this drink, we'll use a few of these "healthier" ingredients:
Honey - all natural sweetener, immune booster, naturally antibacterial
Lemon - liver and gallbladder tonic, alkalizing, natural detoxifier
Coconut Water - rich in electrolytes, potassium and magnesium, very hydrating

The Coconut Pearl
Ingredients:
2 oz gin
2 oz coconut water
1 oz lemon juice
1 oz honey syrup (honey melted down with approximately equal parts water until dissolved)
10 - 12 mint leaves
Directions:
Muddle mint with honey syrup in a cocktail shaker. Add gin, coconut water, lemon juice, and ice. Shake and serve over ice in an Old Fashioned glass (or in my case, one of the 200 mason jars that we have leftover from our wedding 4 years ago!).

So a tasty, and HEALTHY, refreshing drink that you can turn to when you want to feel good [or not so guilty] about your cocktail choices!
As always, we would love to hear what you think about this drink or any of the others we've featured on our blog!
